I really like Trent's idea for veggie skewers: use whatever you have! No need for a certain combination. I love how beautiful the veggies look alternated on a skewer. You won't miss the meat in these! It calls for feta cheese, but you could use another kind. To clean the mushrooms he recommends using a special brush or a paper towel.
