Corn bread is a humble kind of bread, right? Not this corn bread.
It’s the best corn bread I’ve tried, and I’ve tried a lot. Tender, with just the right “give” when you bite into it, it is a keeper.
I love corn bread hot from the oven with a bowl of chili. Comfort food that really comforts. I don’t even add butter, but you can if you like. Leftovers are never around for long.
This would be good as corn muffins too. Mini muffins are great for kids’ lunches/snacks or on a brunch buffet. This recipe is cheap and easy to make, but it doesn’t taste cheap.
This recipe is from Betty Crocker, but I got it from my daughter. She made it for us and I had to have the recipe. She used white cornmeal, but you can use yellow cornmeal if you like. Give it a try and see if it belongs in your recipes.
