Just a quick post about my new favorite meatballs. We made meatball subs and I just couldn’t get over how great the meatballs are. These are easy to make and have a wonderful flavor. Great for subs or on pasta, and really good in soup as well. Great for game day! Cook ahead of time and just assemble!
Meatball Subs
(adapted from a recipe at Cooking Light) This is supposed to serve 4 people, but it depends on what else you are serving and how hungry people are.
Meatballs:
12 ounces ground beef (90% lean)
1/3 cup bread crumbs
1/4 teaspoon crushed red pepper
1/4 teaspoon salt
3 garlic cloves, minced
1 egg
Mix all ingredients and shape into meatballs about 1-inch in diameter. .
Spray large skillet with cooking spray. Brown meatballs on medium-high heat, then reduce heat to finish cooking the meatballs–about 8 minutes.
Add the cooked meatballs to your favorite marinara sauce and heat through on a low temperature setting.
Try to find some football shaped buns for this or it will be too messy to eat. Cut an oval opening at the top of the buns and pull out some of the bread inside to make room for the stuffings. Brush a thin layer of olive oil inside each bun and sprinkle with garlic powder. Broil until toasty.
Put meatballs in each toasted bun and top with 1/3 cup marinara sauce each. Then sprinkle some mozzarella cheese on each sandwich. Broil or microwave just until the cheese has melted and is bubbly.
To make these even yummier, cook some onions and peppers in a skillet with a bit of olive oil until tender. Add these to each sandwich before topping with cheese and broiling to melt the cheese. So good!

Meatballs come in handy for so many situations, including appetizers! I love keeping a supply of fully cooked meatballs in the freezer for quick meals and inexpensive entertaining. Hi, Roberta! Yes, I like that too. The easier the better! I bet teens and other hungry critters could make these themselves if the cooked meatballs are in the freezer and pasta sauce is available. It’s hard to fill them up sometimes!
