What is the latest creative way to serve watermelon? Watermelon “cakes” are becoming very popular for birthday parties. Fruit instead of cake is healthier and so yummy.
A watermelon cake is easy to make. Just cut off the ends of the watermelon leaving a middle section the height of the cake. Then turn this middle section on one flat side and cut around the middle of the watermelon to form the cake shape. Lift the rind off and you have a cake! You can use a seedless watermelon for this or just tolerate a few seeds. Place it in a dish with sides and cover in plastic wrap. Refrigerate overnight to let any excess juice drain out. Decorate the next day.
Decorate the watermelon cake with pieces of other fruit. You can frost the top of the cake at the last minute with whipped topping and arrange fruit pieces on top. I don’t know how they keep the whipped topping on the sides of the cake. I have a feeling it would slide off fairly soon. You can skip the whipped topping and place the fruit directly on top if you like. Blueberries can be arranged to make a number if you want the age of the person shown. Cut and serve as you would any cake. Use toothpicks to hold fruit onto the sides of the cake for more decoration.
I like the fruit skewer wands pictured here, but you can serve them separately also. “Star fruit” would be great on these. They’d be great for a princess party or for a magic party. Just be sure no one is going to poke others or run around with these. They can eat them at the table!
Use the leftover watermelon any way you like.

Make Watermelon and Strawberry Lemonade!
Soak some watermelon cubes in vodka for the adults.
Top watermelon cubes with a bit of feta cheese mixed with minced mint. Very classy appetizer!
Freeze watermelon cubes to add to smoothies or make into popsicles with pieces of other fruit.
You can even make Watermelon Rind Pickles. Yum!
Simple Watermelon Salad
Watermelon is inexpensive and refreshing for salads that just say “Summer!” Here is a quick watermelon salad for the adults:
seedless watermelon cubes (can remove seeds if you like)
thin slices of red onion (use a potato peeler to get very thin slices)
Mix 3 Tablespoons of extra virgin olive oil with 1/2 cup of flavored vinegar (can be balsamic or red wine vinegar). Pour dressing over salad and mix.You can add a sprinkling of basil, mint, or your favorite fresh herb to the dressing also. For a little bit of bite, add some red pepper flakes or sliced jalapeno peppers. Sliced cucumbers are good in this too.

By the way, watermelon is fairly low in calories and hydrates you nicely. It also contains lycopene which works to block some free-radicals that do sun-damage to your skin.
