I love keeping some loaves of fruit bread in the freezer for the holidays. They come in handy for brunch, dessert, midnight snacks, just about any time. They don’t take up much room in the freezer (unless you make them as muffins) for a lot of servings. I learned this from my mother-in-law. She brings out a different fruit & nut bread each day of the holiday! They definitely get eaten! I’m in awe of her wisdom.
This makes a great gift for friends and neighbors too. Wrap in plastic wrap and a ribbon. Or wrap it in a pretty dish towel. It will be appreciated!
Here is the link at AllRecipes. The only change my daughter-in-law makes is to add 2 teaspoons of vanilla.
It’s an inexpensive treat that tastes gourmet. Try it; I think you’ll like it! And having it in the freezer feels like money in the bank. Click on the label “quick bread” below this post for other easy fruit breads you can freeze to use as needed. More money in the bank!

You are so right, Stefanie! When they are perfectly black but I have no time to bake, I peel them and freeze them. I can thaw them whenever I’m ready to bake and they work great!

I’ve found that the key to amazing banana bread is using overripe bananas. When they’re totally black, they’re perfect for baking.

Merry Christmas, Buck! You are trying to stir up trouble between me and my daughter-in-law, eh? lol She’s a great cook and I learn from her all the time. She has adopted some of our family recipes also. It’s all good.
You can eat rather than bake if you like, but this is a recipe worth trying! Have a wonderful holiday season, my friend!

Sounds wonderful! Thanks for the recipe. But sadly I’m more of an eater than a baker. I’ll leave that to the experts like you and your daughter-in-law. So who’s the better cook between you two? Merry Christmas and Happy New Year!
