This is a re-post, but a yummy one. I’m very busy taking care of my mom right now. So I hope you don’t mind.
I can’t wait to try these. They are supposed to be fantastic. It’s a little bit of the flavor of salt & vinegar potato chips on 1/4-inch slices of potatoes grilled to crispy perfection. Well, they don’t have to be perfect, but they will be tasty.
You get the vinegar flavor by boiling potatoes in a vinegar solution. The vinegar flavor is there, but not as strong as in most vinegar & salt potato chips. This unusual technique comes originally from the cooks at Martha Stewart.
For a different way to serve these, how about cutting the grilled potato slices in half for dipping in a creamy sour cream & onion dip? Yum. Just stir sour cream with some onion flakes to be sure the dip is not too thick for the “fries.” Another popular dip is a mixture of half barbeque sauce and half mayonnaise. You can add a little paprika, pepper, or hot sauce to that if you want more kick to it. Or you can go old school and just use catsup. For more kick use seafood sauce. I think I”d like the sour cream onion dip the best. Yum.
These make a great side dish for your cookout and are a nice change from potato salad. Easy to do too.
