What a great idea! Just make your favorite potato salad & add a can of drained garbanzo beans (chickpeas) to the finished salad. Mix & serve. This inexpensive and yummy dish packs plenty of protein.
The garbanzo beans add some crunch and a whole lot of cheap protein. Plus the eggs have protein & the potatoes have some. So it might seem like a side dish, but you can serve it as a main dish. Anything else you serve is just for fun and for more vitamins & fiber.
Leftovers could be used as a snack or a pita sandwich filling with some lettuce maybe. It could also go on crackers. That makes a great lunch.
