I have a lot going on with family right now, so I’m putting up a post from the archives. I’ve added a new link for an improved version of this smoker that should make it even easier to use. Enjoy!
Alton Brown came up with this great little smoker that is not too difficult to make. This set-up is popular because it doesn’t take up too much room on your patio and can be built from fairly cheap parts. You might have some of the parts already. Thank you Alton!

Even if you don’t use this version, it has more side bar alternatives to check out. I’d look them over before deciding how to make your smoker. You might want to combine some of the features.

Not only does this “ible” show a way to make the lid more user friendly, but it includes a way to use a cast iron skillet instead of a teflon-coated pan as in the original. That could be a healthier option.
One of the comments said it is fun to try different liquids in the water pan to give various flavors. I’ve not used a smoker, but that sounds interesting. Yum!
I wish I’d remembered this in time for Father’s Day–it would have been a great gift for Dad.
