Salsa with Shrimp
This is the easiest recipe ever. Just add chilled cooked shrimp (thawed frozen is fine) of any size to your favorite jarred salsa. I like to add a can of drained corn and a can of rinsed and drained black beans to it. Mix and serve with tortilla chips. Chill all ingredients before mixing for best taste. This serves like an appetizer, but can also be a meal. Keep it in mind for those nights when you are too tired to cook! It’s a lot healthier than something from a fast food restaurant & you can keep all the ingredients on hand.
Margarita Pie
This is probably not authentic Mexican food, but it’s a great frozen dessert with the alcohol still in it.
So happy Cinco de Mayo! Serve your favorite margaritas or cerveza! Lemonade is great too. By the way, Cindo de Mayo is May 5th, but feel free to make it a Cinco de Mayo weekend.
