Imagine a dark chocolate cookie looking soft and chewy. You take a bite and are swept away with chunks of chocolate mint hidden inside. Oh, my. These cookies are an experience.
Our family’s best amateur chef made these wonderfully chocolate cookies for Thanksgiving and I haven’t been able to get them out of my mind since. They have an intense minty flavor thanks to his one change to the recipe. He just substituted mint-flavored chocolate chips for the regular chocolate chips called for in the recipe. He says you can’t get that intense of a mint flavor with chocolate mints or by adding mint flavoring. Oh what a difference. He says you could also add macadamia nuts or other nuts if you like. I guess that would make the cookies more gourmet, but I love them just the way they are.

If you take a look at some of the photos there you’ll see some variations. Some used white chocolate chips or chunks. Some added a swirl of chocolate frosting to the top of each cookie. The one that blows me away is the photo of two of these cookies with a thick slab of vanilla ice cream between to make an ice cream sandwich. Oh. That’s. Just. Too. Decadent. Try these; you won’t be sorry!
