I love these recipes. There are the inexpensive: deviled eggs, flavored popcorn, There are the gourmet: marinated olives, stuffed dates, and fresh figs (or jam which is cheaper) on whipped ricotta on toast. Most are really nutritious: spiced nuts, various kinds of hummus (frozen pea hummus sounds really good), kale chips, and smoky fried garbanzo beans. All of these look great and are super easy to make.
A couple that sound fabulous:
Broiled Feta
“Broil slab of feta in gratin dish until browned Drizzle with olive oil, sprinkle with fresh chopped oregano, parsley, red pepper flakes, black pepper. Serve with crackers.”
I love plain feta on crackers, but this sounds wonderful.
Pesto Bites
“Halve 1 pint of cherry tomatoes. Spread each half with jarred or homemade pesto. Thread onto toothpicks along with a 1/2-inch cube of fresh mozzarella. Drizzle with extra-virgin olive oil, season with salt and cracked black pepper.”
So much flavor on a toothpick! Reminds me a bit of a Caprese salad.
