A turkey breast is so much easier to prepare than a whole turkey and this recipe is a winner. With panko breadcrumbs for crunch and a mustard herb glaze there is plenty of contrast to the mild turkey breast. It will serve about 6-8 people with some leftover for sandwiches. Mr. Pennies thinks the best part of Thanksgiving is the leftover turkey. He has it for breakfast on buttered toast. Leftover cranberry sauce is a nice sandwich spread too. Mmm, leftovers.
Some people like to make a whole turkey and make a turkey breast to go along with it. That way there is more white meat and you can often fit the extra breast in the same pan as the whole bird. It will need a different amount of cooking time, so plan accordingly.
