These marinated fresh tomatoes make a great side dish for a cookout, but they are even better on warm bruschetta. However you have it, make it the day before because it’s better the second day. You can use any kind of tomatoes for this and a mixture of different kinds looks and tastes great.
You can add those little mozzarella balls if you want to have it as more of a meal salad or in a sandwich–could be great in a pita sandwich. Some reviewers used olive oil instead & I think I’d like that better too–much better flavor. One person said they love how the juices sink into the warm bread for bruschetta. You might make some bread in the breadmaker for this or use toasted bagels as called for in the recipe. She says to add some feta cheese to the top of the bruschetta if you like it.
