Here’s a quick skillet supper with everything going for it. It’s low calorie, heart-healthy, full of fiber, high in vitamin C & A, high in calcium, is good for lowering stress, and has plenty of protein. The tomatoes and chard are supposed to be foods that keep you young looking. Wow! And with all that it’s delicious!
It has plenty of chewing satisfaction with the gnocchi and plenty of bright flavors with onions and Italian stewed tomatoes. With a gooey cheese topping you can get your cheese fix too! What’s not to like? And did I mention it’s fairly cheap to make?
Since you are using canned tomatoes, canned beans, and already prepared gnocchi, it’s very easy to throw together. Very satisfying for a quick dinner. I bet your kids or spouse could even prepare this before you get home. The beans contain B vitamins that fight stress, so that helps if they make a mess!
You could use any pasta for this & spinach works well as a substitute for chard (also as Swiss chard). I like to keep a bag of loose spinach leaves in the freezer for dishes like this. You can find them in the freezer section. Since they are loose in the bag you can use just what you need.

Absolutely! If you like penne pasta it adds a nice chewy texture and will capture the sauce in the little grooves. Gnocchi can’t do that. I’d think penne pasta or any pasta with some grooves would work well, but you can try it with your favorite pasta too!
