This is a gorgeous recipe for entertaining and takes only 25 minutes to make! Serve on rice with a side of green beans or salad. Sherbet or sorbet for dessert with shortbread cookies (homemade or purchased) & you’re done! If you don’t have time for a green salad, make a simple salad of chunks of tomato and avocado. It makes its own dressing when mixed and tastes fresh and luxurious. A gourmet meal in record time!

Choose brown rice or a mixture of brown rice with white rice to make that part of the meal healthier. For entertaining you could add more sliced almonds to the rice to look nice. You can make the rice the day before & buzz up in the microwave to heat. I like to place the chicken on a bed of rice on a pretty dish to serve. You could arrange cooked whole green beans on the platter as well. Whole green beans always look more elegant, even if they are from frozen. We think they taste better too.
This chicken has 396 calories per serving, but remember it’s sized for men. So if you’re on a diet have a smaller portion and perhaps just 1/3 cup of rice. Have more salad and/or green beans as they are very low in calories, but high in nutrients. Choose a small serving of sorbet and skip the cookie perhaps. With all the textures and flavors, you won’t feel deprived at all!
