Crepes are so versatile to fill with seafood, chicken, and vegetables
for an entree, but they make a terrific dessert too. Try filling with
a small handfull of chocolate chips and 1 Tablespoon of dried
cranberries, then microwaving for a couple of minutes or long enough
to melt the chocolate chips.
Serve with a dollop of whipped cream, a dusting of cocoa powder or cinnamon, and a topping of fresh fruit like strawberries and/or bananas. You can add
a drizzle of chocolate syrup or fruit syrup if you like. If you cut
strawberries and mix them with a little sugar they will form their own
strawberry syrup after a few minutes. Try different fresh fruit
combinations throughout the summer and fall as they reach peak season
at the markets.
Your kids might like to make these for themselves and their friends. They can use tortillas instead of the crepes for an even easier snack..
