Potatoes are cheap, good, and not hard to prepare. Adding olive oil to them adds heart-healthy goodness. Since you keep the peelings on you keep the vitamins and fiber too.
The recipe calls for red-skinned potatoes, & they look great, but you can use any kind of potatoes. You can even add some baby carrots or carrot chunks to the mix. I like to add carrots, a cut up onion, and some whole green beans (frozen) for a side dish that really completes the meal. Just drizzle enough olive oil over all before baking. We can’t resist this combination. It tastes so good, you might forget to eat the meat at your meal. If you area baking meat in the oven this side dish can bake at the same time. Just stick with a fork to see when they are done.
Just scrub those spuds, cut them into chunks, & throw them in the oven. No worries about making mashed potatoes at the last minute. Great stuff!
