This is the easiest recipe for St. Patrick’s Day & everyone seems to love it. Just get a chocolate cookie crust & fill it with mint chocolate chip ice cream. I like the green ice cream for St. Patty’s Day, but you can use the white version if you like.
You’ll need to freeze this at least 24 hours before serving it, so start early! If you add the melted chocolate as described in the recipe, be sure to let it cool a bit before drizzling over the ice cream Otherwise it will melt the ice cream. Not good. I prefer to just shave some bittersweet chocolate from a candy bar when I’m ready to serve the pie.
To serve, take it out of the freezer & let rest about 15 minutes before cutting. Dip a knife in hot water to cut the pie. You can decorate it with chocolate shavings and/or whipped topping before you cut it or on individual pieces.
Another version is to buy or make chocolate chip cookies & make little ice cream sandwiches with the mint chocolate chip ice cream. Wrap in plastic wrap & freeze. Yummy!
