Here’s a great way to have a quick healthy meal the whole family will love. If your family loves broccoli as much as ours does, you might want to double the amount. You can add red pepper strips for color, flavor, and vitamins. For more visual interest add some snow pea pods (don’t overcook), baby carrots, and those tiny corn cobs. The carrots you might need to boil a little bit first to be sure they are not too hard.
It’s Chinese New Year or Spring Festival & this dish certainly looks fresh and pretty like Spring. The Chinese gave us their stir fry technique which is such a healthy way to cook and uses a minimum of fuel. We thank them for this great cooking method; it has added so much to our tables. I have a special place in my heart for stir fry recipes. When my dh and I were dating we went to our favorite Chinese restaurant once a week. It was always a special occasion and I loved the way the carrot circles were cut to resemble flowers. On my birthday the restaurant gave me one of their signature vases, a green clear tall cylindar shaped like a bamboo stem. Love it! As bamboo is a renewable resource we are finding it being used in many products and in home decor designs.
