This is our family chili recipe that is also very easy to make.
1 pound ground beef
2 cans beans
2 can stewed tomatoes (we like Del Monte)–cut the larger pieces into bite-sized pieces
2 small cans tomato sauce
2 teaspoon chili powder
2 regular sized carrots
Brown the ground beef, then add water to cover & let it simmer to let some of the fat come off the meat.
In a large pot put the beans, stewed tomatoes, and tomato sauce. Add about 2 teaspoons of chili powder (more or less according to taste). Mix well and heat on low to medium heat. Chop the cleaned carrots into small pieces & add to the pot.
Use a slotted spoon to remove the ground beef from the water & put it directly into the pot of tomato sauce, etc. Stir well. Let the water from the beef cool before you pour it down the drain.
When the carrots are tender, the chili is ready to eat. You can keep it on low until you are ready to eat, but be sure to stir the chili often to prevent any burning on the bottom.
Serve with chips, crackers, fish crackers, corn bread, etc. You can add shredded cheese, chopped onion, and/or sour cream to the top of each bowl of chili if you like. We like it plain with corn bread. You can also serve chili on top of baked potatoes for an inexpensive and yummy meal. It’s a good way to use up leftover chili. You can also serve leftover chili on top of hot dogs or on top of pasta. We like to freeze any leftover chili in individual serving sizes to use for “fast food.”
