This is my favorite quick salad, maybe my favorite salad of any kind. You just cut tomatoes into chunks (allow juice and seeds to fall into the bowl) and then cut some avocado chunks into the same bowl. Stir to get the tomato juice over all the avocado pieces. Done!
I like to add a little salt and pepper to the salad in my own plate, but since dh likes it plain I don’t add it to the bowl. you could add some chopped cilantro or whatever spices you like if it’s too plain for you.
You don’t have to add any lemon juice to keep the avocado chunks from turning brown because the tomato juice is acidy enough to prevent the oxidation. And the avocado pieces melt a littl bit into the juice to make a kind of dressing that’s just wonderful. Some kind of chemistry occurs in your mouth as the tomatoes make the avocados taste better and the avocados make the tomatoes taste better! Both are very nutritious too.
Try this the next time you want an easy fresh-tasting salad or side dish to perk up a menu. This time of year (February) the avocados are at some of their lowest prices of the year. I found vine tomatoes at not too bad of a price & they were great in this. I used 2 tomatoes and 1 avocado and the two of us ate it all.
You could also use this as a sandwich filling for pita bread or crusty buns. Just add some chunks of cooked chicken, maybe some olives, & a bit of shredded cheese. A good way to use leftover chicken. Yum.
