This is a fine side dish with many meats, and would be wonderful in fajitas. Add some chicken or pork for a main dish. If you have leftover cooked chicken or pork in the freezer it makes a quick stir fry. This is comfort food to me.

Turn this into easy chicken fajitas with left-over cooked chicken (can even be from the freezer) and any kind of peppers. Cook and roll into soft warmed tortillas! How about a side of black beans and rice?
An alternative is to serve over rice.
