I think this is such a pretty dish. The bright green with the bright orange really perks up a winter meal. It’s beautiful for entertaining too.
They cut the carrots into long skinny pieces, but I think it’d be attractive to cut them a bit shorter, more like carrot stick length. They’d be easier to eat that way too. I like them skinny for contrast to the wider snow peas.
Don’t overcook these for best flavor & to keep the bright colors.
