Roasting turns the brussels spourts slightly sweet and the olive oil & salt add a buttery flavor. These are wonderful for a holiday, for entertaining, or for when you want a yummy treat that is super healthy for you. They are on the Super Foods list after all.
I’ve seen similar recipes that say you can mix in a teaspoon or two of maple syrup to the olive oil. I’m not sure I’d like that, but it might be worth a try.
