A fresh fruit salad is welcome this time of year & all the citrus fruit in season makes this a winner.
This is a beautiful salad of sliced citrus fruits (your choice) with pomegranate seeds sprinkled over all. There is a vanilla syup drizzled over it & it sounds wonderful. My idea is to use dried cranberries if you don’t have a pomegranate handy.
My cheater’s version of this is to mix pineapple tidbits in their own juice with some mandarin orange segments (from a can or from fresh clementines or tangerines) with some dried cranberries. Mix in a bowl and serve. Very refreshing.
This is also a festive way to display citrus slices for mixed drinks. Just leave on the peels and slice in halves or quarters. Sprinkle on the pomegranate seeds or even dried cranberries for a pretty display. You might want to drizzle on or omit the vanilla syrup depending on what drinks you’ll be making.
