I don’t know where I got this recipe, but I’ve made it & it is really good. The apples and dried cranberries make a good flavor combination, and the cranberries are red for Christmas time. Assemble it the day before & then just put it in the oven on Christmas morning. It makes the house smell wonderful.
Overnight Christmas French Toast
In a 13″x9″ pan combine 1 cup light brown sugar, 1 teaspoon cinnamon, and 1/2 cup melted butter (can be melted in the microwave).
Add to the pan: 1/2 cup dried cranberries and 3 apples, peeled and thinly sliced. Toss well & spread evenly over the pan.
Cut 1 loaf of French bread into 1-inch slices & arrange them on top of the pan.
Make the egg mixture: 6 large eggs, 1 1/2 cup milk, 2 tespoons cinnmon, and 1 Tablespoon vanilla. Mix wee & pour over bread in pan. Cover the pan with foil & refrigerate 4-24 hours or overnight..
To bake, preheat oven to 375 degrees. Put the pan in the oven with the foil still on & bake for 40 minues. Then take the foil off & bake for 5 more minutes.
Loosen edges and invert onto large serving platter. You don’t have to turn it upside down, but it looks great with the fruit side up. Serve warm.
