This is one of my favorite casseroles. How can you go wrong with spinach, rice, and cheese? It calls for brown rice, but you can use white rice if that’s what you have. It calls for fresh spinach, but I use frozen sometimes. It’s fine. This is a lovely side dish for a holiday meal where you have big eaters. It will fill them up and add good vitamins. You can make it a day or two before & just warm in the microwave on the day you want to serve it. Easy!
This casserole combines the incomplete proteins of cheese with the incomplete proteins in rice to make high quality complete protein similar to what you get from meat. The iron and vitamins in the spinach add more benefits that are found in meat. So for very little money you get high quality protein in a yummy casserole.
This kind of dish just warms the soul and gives you all kinds of energy. It’s not expensive and it’s wonderful.
