This pretty chicken stir-fry has a loads of flavor, yet it’s healthy. You can have this chicken on top of rice or pasta or even on top of a green salad if you like.
The red bell pepper plus the green broccoli make it rather Christmas-y looking. Just be sure to not overcook them so that they keep their bright colors. Better that they are just tender-crisp than to be mushy. If you are having it during the Christmas season you might want to use white rice instead of the brown to continue with the holiday colors. What a refreshing dish to have when there are so many high calories foods around!
