This is a great side dish for holiday meals and takes very little time to make. The linked recipe is for making this in your oven, but you can make it much quicker in the microwave. Cut the squash in half, take out seeds, & put cut side down in a dish with about a half cup of water in it. Microwave about 10-15 minutes on high or until tender. Then turn the halves over and add the brown sugar and butter to each half. Microwave just a little bit more until the butter is melted.
If you make them in the oven as the original recipe says, you will get a deeper roasted flavor, almost a nutty flavor. You might want to use the oven method when you already have something baking in there. The microwave method is great for when you don’t have a lot of time, which is often for most people.
