I’ve seen beets added to many foods for the nutrition benefits, but you will definitely enjoy this one. Since chocolate is good for you too, the case could be made for this as health food!
You can make this cake in any shape pan or as cupcakes. You can use drained, canned beets instead of fresh beets if you like. That keeps the mess of beet juice to a minimum.
When working with beets keep a cloth nearby to wipe up any drips or spills right away. Beet juice stains countertops and clothing quickly. Wear old clothes or black clothes while making this for the same reason.
