Yellow delicous apples make great applesauce. They have a touch of tart flavor that keeps it interesting & they “mush up” easily. Other cooking apples will make good applesauce too, but avoid apples that are merely sweet with no hint of tartness. They don’t give very good flavor, tasting just sweet.
The method shown is for canning the applesauce in hot jars. My mom used to make applesauce & just put it in the freezer using all sorts of plastic containers (yogurt and sour cream containers are a handy size). Just cool the applesauce before putting into plastic. Then label & freeze. I like to add a layer of plastic wrap between the applesauce & the lid to keep air out. These work very well for fresh-tasting applesauce whenever you want it. It’s also wonderful baby food or healthy snacks for kids.
You can make a chunky style applesauce by stopping the cooking earlier. Apple butter is made from applesauce by adding more spices & cooking down even more to get a spread-type thickness. You can can applebutter or freeze it like you would applesauce. Enjoy!
