We love brats on the grill, but this method of cooking them in beer first sounds good. Reviewers said to use a strong flavored dark beer and to prick the brats with a fork to let the beer flavor sink in. Also you can cook them in the beer longer than the recipe says to get more flavor.
All that cooking helps get a lot of the fat out of the brats, and let’s be honest, it’s saturated fat. We love lean brats & this is one way to get them nice and lean. Another way is to buy brats from a butcher who makes them on the lean side rather than getting supermarket brats which are often full of fat. Our favorite brat maker in the whole world is Schubert’s Meats in Millstadt, Illinois. We have to have some when we are visiting family there. You can even order by mail from him, though we’ve never done that. Best brats ever–very lean and lots of flavor. (I have no connection with Schubert’s other than a love of the products.)
