I do hate the steam and heat of canning & I always worry that I didn’t do it right. Like anything else, practice helps. And when you have a lot of tomatoes, dehydrating takes too long. You can freeze some veggies & fruit if you have the room in your freezer. That’s a lot cooler work too. And you can store the dried fruits & veggies in jars on a shelf.
Dehydrating veggies and fruit makes for wonderful ingredients to use later. The flavors get concentrated! Dried fruit is expensive in the store, but not at all when you dry your own. Talk about frugal, healthy snacks! Great for camping too.
