You can get creative with toppings. Whatever you’d put on a baked potato works. Or add some cubes of avocado. Or use pizza type toppings. You can even add some fresh greens. Just about anything you’d put on bruschetta works too.
I like adding the sour cream just before serving so the sour cream doesn’t melt too much.
I think these would be nice cut into strips too. Smaller potatoes work also, but a plate of these appetizers look best if they are all about the same size. Keep the scooped out potato insides for mashed potatoes, a casserole, or soup.
These are not too expensive to make and they might get your family into making baked potatoes (with toppings) as a hearty snack. That way they eat the whole potato while still enjoying the goodies on top. Get them to drink a cold glass of milk with it & they will be getting complete protein–they won’t get hungry so soon again.
If they are really hungry have them top a baked potato with some leftover chili! That makes a good quick supper when you cook the potatoes in the microwave & use leftover chili from the freezer.
This would make a great camping recipe. Bake the potatoes wrapped in foil in the campfire, then top them with shredded cheese & cooked bacon or canned chili. Now that’s a hearty meal!
