Trent at the SimpleDollar has come up with a tasty lasagna for cheap. Usually lasagna is not that cheap to make. This one is meatless, which is a major way to keep costs down. He uses a homemade pesto from his garden which keeps costs low also. If you buy pesto that will increase costs a bit. Also he uses 12 lasagna noodles where I usually use 9. So that’s an extra layer of pasta to stretch the meal.
You could add shredded carrots and shredded zucchini to the spinach for more vitamins and variety if you like. Zap them in the microwave a bit before adding. If you grow your own zucchini the added cost is almost nothing for the zucchini. Carrots are pretty cheap too. With these added vegetables you might have enough filling to use just 9 noodles, but use the number that you like. Or maybe you could skip the pesto if you add the carrots and zucchini.
The per serving cost is for one piece of lasagna. We generally have 1-2 pieces of lasagna each at a meal. YMMV
At any rate this recipe is worth a look for being a tasty low-cost recipe. Thanks, Trent, for working this out for us. I do love spinach lasagna. Any lasagna freezes well. We freeze individual servings & buzz them up in the microwave for a quick & yummy meal.
