I don’t usually see these two vegetables combined and I don’t know why. They look really pretty together. This recipe adds pine nuts and sliced ginger to put it into the gourmet category. The pine nuts are supposed to be very good for your health (see linked article) and ginger is well known for health benefits.
Since it’s a grain (corn) with a legume (peas) it makes complete protein. The pine nuts are a bonus. So you could serve just this dish as your main dish if you wanted to. Another way to use it is when your more typical main dish is low on protein. I’m thinking kids might like this without the sliced ginger because it’s so pretty.
If you are looking for a really cheap meal with good nutrition, you could make a vegetable soup with corn & peas as the main ingredients. Maybe serve with hot corn bread or toast. Anything else you have hanging around the refrigerator could be added also. Cheap, healthy, good!
