This woman uses unsweetened lemonade drink mix when lemon juice is called for. She mixes it with water & then uses it as a substitute for lemon juice in all sorts of recipes. I think those drink mixes uses artificial coloring, but they probably have some vitamin C in them. You could also use packets of True Lemon (or True Lime) that you mix with water to get unsweetened juice. (2 packets make 1 Tablespoon of juice.) The package says it is all natural, but the ingredients for the True Lime are: citric acid, lactose, lime juice, lime oil, maltodextrin, and ascorbic acid (vitamin C). You might want to compare those ingredients with those on the drink mix. I’d compare the costs of using each one too.
I’m not saying that these dry mixes are as healthy for you as pure lemon juice that you squeeze yourself. You have to decide what is worth it to you. You might find that certain recipes require the fresh juice.
I still like the flavor of fresh squeezed limes as a very fresh-tasting salad dressing all by itself. I doubt that using True Lime would be as good for that.
