This is like a good rice pilaf with chicken added. The pilaf has some golden raisins which add a lot of zing. You could also serve the pilaf as a side dish with other meals–gorgeous for entertaining or any holiday meal. Rice never tasted so good!
You can serve this fresh tasting salad warm or cold. It calls for long-grain rice, but I’d mix in half brown rice. That will add more nutrition, fiber, & a slightly nutty flavor that you want with this recipe. You can substitute other nuts for the pine nuts if you like. You can use leftover chicken for this salad to make it even quicker.
