You can’t get much quicker or easier than this. You mix jarred salsa with black beans & corn! Serve with tortilla chips for a great side dish or appetizer.
Since you are combining a grain (corn) with a legume (beans) you are getting a complete protein. Of course you probably won’t eat enough of it to make for a good sized serving of protein for a whole meal, but it adds to the protein of the meal. If you eat about half of the recipe yourself, it is plenty of protein!
This would make great easy camping food. No need to have boring food while camping. Just drain a can of beans, a can of corn, & mix with a jar of salsa. If you serve enough of it, it could be a complete meal because of the complete protein, grain (tortilla chips), and veggies. Nice on a hot day when you don’t feel like cooking. You might want to increase the amount of beans & corn. If you drink milk with this you are adding protein too. Dairy (milk) + grain (tortilla chips) = complete protein. Easy, peasy.
