I often substitute ingredients mainly because I don’t want to run to the store to get just 1 or 2 items. These substitutions actually save money. And it’s quicker than running to the store!
There is quite a discussion following this article about whether it’s ok to use “spoiled milk” or not. You can do as you like, but I’m on the side of not using it. Why risk sickness? Sickness is expensive, not to mention not fun.
