If you like watermelon, this is a great way to add it to a salad. With so many flavors the salad is delicious. Lots of different textures too. Besides watermelon cubes, you have cucumbers, tomatoes, green peppers, red onions, barley, blackeyed peas, feta cheese, plus olive oil and wine vinegar. Very satisfying. No wonder the Meditteranean diet is said to be so healthy!
The cooking time for regular barley given in the recipe is too long for me (30 minutes). I use “quick barley” that doesn’t heat up the kitchen so much with all that steam. All you do is boil water, stir in the barley, cover, turn down the heat to simmer & wait 10-12 minutes. Remove from heat & let stand another 5 minutes. Barley is great in many things, & you can keep cooked barley in the fridge for up to a week. A convenience food! It’s pretty cheap & healthy too.
There is a fair amount of protein with the blackeyed peas (legume) + barley (grain) + feta cheese (dairy). Good old combined incomplete proteins adding up to complete proteins with the same protein quality as meat. If you want more protein to make it more of a whole meal salad, just add a little cooked chicken. This is indeed a whole meal salad. And so refreshing in the summer time!
