This is a great whole meal salad that includes cooked chicken, bacon, hard boiled eggs, and blue cheese. Oh, and there is lettuce too. lol
However you serve this attractive salad, this is sure to be a hit. It just says summer to me. You could use turkey bacon and less eggs if you are cutting down on cholesterol. Feta cheese is more heart-healthy than blue cheese, but blue cheese is so strong a flavor you don’t need much of it. You can use any kind of onions and feel free to add other raw vegggies to the lettuce layer.
The recipe calls for cubes of cooked chicken, but you could add a grilled/cooked chicken breast half to the top of each individual salad if you like.
Usually Cobb Salad is served in layers with the lettuce layer on the bottom. See the photos accompanying the recipe for different ways to serve it. It calls for iceberg lettuce, but you can use any kind–I like Romaine for flavor and vitamins. Also Romaine lasts longer in the fridge.
One person said to use feta cheese instead of the blue cheese for a milder flavor. Many people said to use a blue cheese salad dressing instead of the ranch dressing called for.
