I don’t know why they call this a lush cake. Isn’t a lush slang for a drunk? A drunk angel cake? It has no alcohol in it at all. Maybe they meant luxe? Maybe they meant lush, like lush foliage–very full?
Anyway, it’s wonderful. You buy a prepared angel food cake, slice it horizontally, and put a nice layer of crushed pineapple cream filling in between the layers. It makes the cake end up much taller & that looks kind of cool. You won’t be heating up the kitchen to make this, so it’s even nicer for summer time.
The recipe says to put more of the pineapple cream stuff on the top & add some whole strawberries on top of that for accent. I’d have a bowl of sliced strawberries on the side for people to add more to their serving. Maybe some more of the pineapple cream on the side would be nice too.
A reviewer made some changes to make it a bit more fancy:
“I changed the vanilla pudding to banana, . . . On the first layer I added a layer of very thinly sliced strawberries on top of the filling. The second layer I added a layer of very thinly sliced bananas on top of the filling. Then finished the cake with a chocolate drizzle. It was great hit at the party.”
