I love salad nicoise. It’s a nice cold salad that is a wonderful complete meal in the warmer months.
This salad originated on the Cote D’Azur in southern France and was named for the city of Nice, a very posh place.
People disagree on what should be included, but I say just include things you like. Some choices are: canned anchovies, small cold cooked potatoes, peppers, scallions, artichoke hearts, and various kinds of olives. The biggest debate is over whether or not there should be a bed of lettuce that the rest of the salad is arranged on.
One thing that is supposed to be the same in every salad nicoise is that the ingredients are not mixed, but laid out in sections for each ingredient. Then the oil dressing is drizzled over all. And everything is served cold. It is a bit similar to having an antipasto platter, but instead of pepperoni you use tuna. I love it!
The salad will only be as good as the ingredients in it, so choose very fresh vegetables.
