This is a savory flavored meatloaf. My earlier post, “Cloudy with a Chance of Meatloaf,” is a brown sugar topped meatloaf. The brown sugar meatloaf is the highest rated recipe for meatloaf at AllRecipes. This recipe is #2 and is the one for you if you prefer a savory flavor instead of slightly sweet. This one has a cheesy, oniony, meaty flavor.

“When you make my recipe for Meatloaf you should use Cheese Flavoured Ritz crackers, and the Flakes from Dry Onion Soup Mix (sift out the soup as it makes it too salty) for a bit of pizazz add just a dash of Tabasco Sauce. I also mix up the cheese sometimes 3/4 chedder to 1/4 mozzarella.”
Instead of using the onion soup mix & using just the dry onions from it you can use dried onion flakes to begin with. I have Minced Onion flakes from Tone that I bought at Sam’s Club & I use them a lot.
You can make this in muffin pans to get more crust per serving (we like the crust the best), plus it’s easier to freeze individual servings–freeze on cookie sheet first, then put in plastic freezer bag. You can also use them as burgers for sandwiches in this shape. A reviewer says:
“It is good for making meatloaf burgers, too! Just add about 1/4 more cracker crumbs to make the burgers firmer. Plus, a good glaze for the meatloaf is 3T ketchup, 1T honey and 1/2t worchestershire. Pour it on before baking and you’ve got yourself one GOOD meatloaf!”
If you don’t want the glaze, just leave it off. Some poeple just have to have a slightly sweet glaze.
