You make these the day before, then bake them in the oven on the day you want to serve them. I get it that this is a way to have less to do when making a dinner, but for a big meal I don’t see how this would work.
At Thanksgiving or other big holiday, you probably will have the oven occupied by a turkey or other meat. It’s always a problem trying to get the rolls put in the oven right after the meat comes out. Maybe you could put the potatoes in after the rolls come out?
I’m posting this in case it helps someone, and if you figure out how this could work please let us all know!

Once they are warm they could be kept warm in the crockpot. I do this with mashed potatoes I make on the day of the big dinner. After they are made right before dinner I put them in the slow cooker to stay warm.

I’m wondering if these mashed potatoes could be warmed in the crockpot? That would free up the oven.
