This carrot cake doesn’t have a lot of extra ingredients, but it still tastes fantastic. I’d leave out the nuts in the frosting so that it can be iced smoothly. You can always sprinkle chopped nuts on the top of the cake after it’s iced if you like. For Easter you might want to sprinkle on coconut instead of nuts.
This is a great special occasion dessert or even a good gift.
