This is the highest rated cheesecake on AllRecipes. It’s a deli-style “solid” rather than fluffy cheesecake. I love it.
Whenever I make cheesecake I “ice” the finished, chilled cheesecake with a thin layer of sour cream. It gives a smooth even finish and shows off any fruit topping really well. It also give a slight tang to contrast with the flavor of the cheese cake. It seems to intensify the sweet goodness of the cheesecake. It also hides any cracks that may have formed during baking, though there are good tips in the recipe to prevent cracks.
We love cherry pie filling for a topping, though blueberry pie filling comes in a close second. You can also use fresh strawberries if you like.
