This is a variation on an omelette, but the flavors and amount of veggies make it an Asian specialty. You can make this recipe with any kind of cooked meat that you have on hand. So this is a recipe for pork foo young, chicken foo young, shrimp foo young (my favorite), etc. All the vegetables make it diet friendly & kids seem to like it too.
A reviewer said that if you add 1 Tablespoon of cornstarch the eggs will not spread as much and hang together to make the patty shape that is wanted.
In St. Louis they make Egg Foo Young patties & serve them in buns. They call it a “St. Paul Sandwich” and no one knows why. A yummy hot sandwich for a cold day. Maybe it should be called Egg Foo Yum. It is delicious.
