My husband can’t get enough of these. They are clones of the Pepperidge Farm cookies that have the apricot jam/jelly in some & the strawberry jam/jelly in the others.
This recipe is just the best & they are just as good if not better than the store-bought cookies IMHO. You can use any jam or jelly that you have on hand or whatever you like. We like the apricot & the blackberry jams the best.
They look like jewels on the cookie tray & you can put in as much or as little jam as you want in them. They are not expensive to make, but they look expensive. What a great gift a box of these would be.
If you freeze them, be sure to put a layer of waxed paper between the layers to keep them from sticking to each other.
